Makes about cups of shredded chicken
2 Roma tomatoes, diced small
1 cucumber, peeled, seeded, and diced small
1 tbsp capers, roughly chopped
1/4 cup red onion, minced
2 ounces smoked salmon, chopped small
2 tbsp fresh dill, chopped
8 ounces fat-free or reduced fat cream cheese
1/4 cup fat-free sour cream
- In a large bowl, mix all ingredients together thoroughly.
Suggested: serve with flat bread chips.
